Bruschetta

With all these warm evenings recently, we're trying to come up with more summery recipes.  Things like the crock pot are about to be retired for the season and we're looking for simple things to make during the warm months.  Last week we tried to make bruschetta.  It came out really well!

The best thing about this recipe is how simple the process is.  You chop up a bunch of tomatoes and some basil.

Throw it in a bowl with some salt and pepper and olive oil.

And then throw it onto a piece of toasted bread.

Voila!  We had no idea it was so easy.
Any other ideas?

Wienieburgers!!!!

When I was a child my mother made this meal called Wienieburgers. They were awesome. Most humans may barf at the contents, but I love them. Still being a child, anything with hot dogs in them is at the top of my list. Here is the recipe:

Strange but yummy!

1 lb hot dogs, chopped into small pieces
½ cup cheddar cheese, shredded
2 hard boiled eggs, chopped fine
¼ cup chili sauce
2 Tbl. sweet pickle relish
1 tsp. prepared mustard
½ tsp. garlic powder
1 pkg. hot dog rolls, *buttered* on outside

Mix all ingredients and fill hot dog buns.
Place in baking dish and bake at 375o or wrap in foil and grill for 15 min (I wrap mine in foil and just place them on the oven racks).

Try them! You will be pleasantly surprised!!
